Spicy Shrimp Lettuce Wraps
These lettuce wraps are super healthy and so easy to make! Plus they can be eaten as an appetizer or as a main dish. Substitute chicken for the shrimp if you prefer, plus feel free to add any other ingredients to the mix to make it exactly the way you like!

1/2 cup Soy Sauce (reduced sodium)
1/2 cup Miren Sauce
1 tbsp Toasted Sesame Oil
1 tbsp Olive Oil
2 tbsp Rice Wine Vinegar
8 medium shiitake mushroom, stems removed & sliced thin
2 cups shredded green cabbage
1 medium carrot, shredded
1 can chopped water chestnuts
15 medium cooked shrimp, roughly chopped (or 1 cup cooked, diced chicken)
1 small bunch green onion, sliced
1.5 - 2 tsp Spicy Orange Sesame Seasoning
1 head iceberg lettuce
Combine soy, miren, and rice vinegar in small bowl and set aside. Heat sesame and olive oil in large pan over medium-high heat until just beginning to smoke. Add mushroom and cook 2 minutes. Then add cabbage and carrots and cook an additional 2 minutes, stirring often. Finally, add cooked shrimp, water chestnuts, green onion, Spicy Orange Sesame Seasoning and 1/2 of the soy mixture, tossing and stirring for about 1 minute until heated through. Transfer to a bowl or platter. To serve, spoon mixture into a lettuce leaf and roll like a burrito. Use remaining soy sauce as a dip if desired. Serves 4 as main dish or 8 as an appetizer.
