Creamy Wild Mushroom Soup
4 C. chicken broth
2 C. half & half or heavy cream
4 cups fresh mushrooms sliced very thin - button, shiitake, or cremini
2 Tbsp olive oil
2 Tbsp butter
4 cloves garlic, minced
1/2 medium onion, finely chopped
1/4 tsp dried thyme (optional)
1 bay leaf
1.5 tbsp corn starch dissolved in 1.5 tbsp water
2 tbsp Wild Mushroom & Peppercorn Seasoning
Fresh parsley for garnish
Heat olive oil in a large stockpot or Dutch oven over medium heat. Add garlic, onion & mushrooms, and cook, stirring occasionally, until tender and mushroom have lost most of their liquid, about 5-6 minutes. Add butter, bay leaf, thyme and Wild Mushroom & Peppercorn Seasonings. Once mixed in, add chicken broth. Simmer for 5 minutes, then add the cornstarch mixture. Continue to simmer until soup has thickened, about 1-2 minutes. If too thin, you can add more cornstarch mixture until desired consistency. Stir in the half & half and turn heat off (do not boil or it may curdle). Serve immediately.
